What is Miso Paste For?
Miso paste is an incredibly versatile paste which can be used for soups, broths, sauces or pickling; you can also use it as a glaze or in dressings. It is made by fermenting soybeans, rice, barley and wheat together, which in turn creates a thick textured paste.-

Although all miso contains some, if not all, of these core ingredients, not all miso is the same. Miso has a variety of different colours, which range between a pale, peanut butter brown to a more reddish-brown.
The darker the colour of the miso, the longer the fermentation process has been, which will strengthen the taste. Miso is separated into three main categories, these include white, red and yellow.
White Miso
Also referred to as shiro miso, white miso has the shortest period of fermentation. It’s great with dressings, soups and marinade due to its sweet and mild flavours.
